‘This recipe is one of my favourites. It’s packed full of vitamins and minerals and tastes exotic and refreshing,’ says dietician Emer Delaney. ‘The pumpkin seeds are full of magnesium and antioxidants so help to regulate blood sugar levels, preventing those dreaded spikes and drops from occurring. Plus, the avocado and spinach are high in monounsaturated fats and iron, respectively, so will release a continued source of energy throughout the day, to keep you feeling alert.’
1 tbsp Raw organic almond butter
1tbsp Pumpkin seeds
1 large cup of Spinach
1/2 Avocado, pitted and peeled
250ml Fresh pineapple juice (not from concentrate)
120g Greek yogurt
Water or unsweetened coconut water (Fill up to the line on the blender or to the consistency you like.)
1. Add all the ingredients to the blender and whizz away. Simple!
For a summertime treat... freeze your leftover mixture in plastic lolly moulds for a cooling, healthy treat.
