Brian Grigor is the Head Chef at Number One restaurant, located inside one of Edinburgh’s most exclusive 5 star hotels, The Balmoral. The restaurant hails one Michelin star, 3 AA Rosettes and offers guests a refined, dining experience in a relaxed atmosphere.
Full of the best seasonal ingredients, Brian and his mentor, Executive Chef Jeff Bland, have specially designed the menu to showcase the very best of Scottish ingredients but with a modern twist.
Brian says ‘The aim was to bring traditionally Scottish flavours to a modern diner’s palate. Scotland has some amazing produce so we really wanted to showcase them in the dishes. Many people love the flavours of traditional Scottish cuisine but, traditionally, the textures can be quite heavy so we’ve used French techniques to lighten them up; whilst ensuring that, at the heart of the dishes, there’s still a strong sense of traditional Scottish flavours.’ And it’s certainly worked. The delicious dishes on offer include: Borders roe deer with rainbow chard, hazelnuts and pistachio; fillet of Blairgowrie beef with pearl barley, tenderstem broccoli and bordelaise; and Scottish crab with heirloom tomatoes, black olives and basil.
The hotel and its restaurant are situated on Princes Street in the heart of Edinburgh, where they offer guests breath-taking views of the Sir Walter Scott Monument and more.
